Let's face it, sometimes eating enough vegetables can be hard. It's especially hard during winter when vegetables aren't as fresh and flavorful. A way to combat this is to experiment and create unique combinations. It's a fun way to eat more vegetables and fruits.

This Grapefruit Endive Salad calls for Belgian endive which is a small lettuce with mild flavor. It's wonderful both in looks and taste. It can be a challenge to find, though if Trader Joe's is in your area, they often have it in stock.

All you need is Belgian endive, grapefruit, walnuts, and white wine vinaigrette. Although any type of grapefruit works, red grapefruit is particularly tasty and visually appealing. The white wine vinaigrette takes less than 5 minutes to make, only using avocado oil, honey, white wine vinegar, and salt and pepper. This recipe is easy and effortless but is beautiful in appearance and makes a statement.

If you aren't strictly paleo, soft goat cheese makes an excellent addition. Simply slice a goat cheese log and place the slices around the plate. Get a little bit of each ingredient on your fork for each bite.

A particular item to note is that it's best to have fresh walnuts. Walnuts tend to develop a bitter taste over time. If the walnuts are bitter, it will definitely affect the rest of the flavors. Look at the expiration date, or if you try one, you can usually tell immediately if it has that bitter taste.

  • Rinse endive heads. Cut ends and place individual pieces on a plate.
  • Peel a grapefruit and remove the membranes. Arrange flesh pieces on top of the endive.
  • Pour dressing evenly over the top of the salad.
  • Sprinkle walnuts around entire salad.

If you aren't strictly paleo, soft goat cheese complements this salad well.
