Belgian endive heads

grapefruit

raw walnuts

white wine vinaigrette
Instructions
Rinse endive heads. Cut ends and place individual pieces on a plate.
Peel a grapefruit and remove the membranes. Arrange flesh pieces on top of the endive.
Pour dressing evenly over the top of the salad.
Sprinkle walnuts around entire salad.
Notes
If you aren't strictly paleo, soft goat cheese complements this salad well.
