Simple and elegant, made with Belgian endive, grapefruit and walnuts.

  • Rinse endive heads. Cut ends and place individual pieces on a plate.
  • Peel a grapefruit and remove the membranes. Arrange flesh pieces on top of the endive.
  • Pour dressing evenly over the top of the salad.
  • Sprinkle walnuts around entire salad.

Notes

If you aren't strictly paleo, soft goat cheese complements this salad well.
