Mmmmm.....thick, fruity, nutritious smoothies! Smoothies are such a quick and easy way to get a nutritious snack or small meal. There are many smoothie recipes available. After trying many, I've discovered my favorite is the simplest with very few ingredients. Yet I still get spinach and mixed berries, both excellent sources of nutrition. I refer to this as the easy mixed berry spinach banana smoothie. Whew!

Just a few ingredients

All it requires is a high-powered blender, almond milk (or water and almond butter if you don't have almond milk), a banana, frozen mixed berries, and spinach. The banana can be frozen, but it's easier to blend if it's not. If you use frozen banana, it's often best to let it sit out for a few minutes before trying to blend your smoothie. Spinach can be fresh or frozen. Most often I buy it fresh then put it in the freezer. If you buy already frozen spinach in a bag, it's best to halve the amount as it is much more condense. Too much spinach can change the taste of your smoothie. I buy mixed frozen berries in bulk so the cost is less expensive. Almond milk is needed to help blend everything together, as well as to add taste. If you don't have almond milk available but have almond butter, put one cup of water in your blender and add 1 teaspoon of almond butter. Blend this first before adding the rest of your smoothie ingredients.

Blending

Having the high-powered blender, such as a Vitamix, is important to get a proper blend. If you don't have access to this, just let your ingredients thaw for about 30 minutes before blending. This will really help and not be so hard on your blender. If your blender is struggling, you can add more almond milk or let the ingredients thaw a little longer.

Unless you are needing to thaw any ingredients, making a smoothie is less than a 10 minute process. And it gives you a filling and nutritious snack, breakfast, or meal. Enjoy!

Equipment

  • 1 High-powered blender

Ingredients

  • 1 cup unsweetened almond milk (store bought or click for homemade recipe)
  • 1 banana frozen or fresh
  • 1 cup spinach frozen or fresh
  • 1 cup frozen mixed berries

Instructions

  • Blend all ingredients together in a high-powered blender. If you have a smoothie setting, simply set this. Otherwise blend for 1 minute or until completely blended and smooth.
(Please note that if you do not have a high-powered blender, you may need to thaw your ingredients for about 30 minutes prior. Another option is to add a little more almond milk.)

Notes

If you don’t have almond milk, you can use 1 cup of water and 1 teaspoon almond butter. Blend until well combined to create the almond milk. Then add rest of the smoothie ingredients.
A frozen banana will result in a thicker smoothie, where a fresh banana will result in a thinner smoothie.
If using store bought frozen spinach in a package, use just 1/2 cup as it is more condensed. Using the full cup may make your smoothie more bitter.
If you use collagen powder, putting it in a smoothie is a great way to consume it. After your smoothie is completely blended, add your collagen powder and blend on low until it is combined.
