Bacon Lettuce Tomato Bowl

Ingredients
  

  • 2 cups iceberg lettuce shredded
  • 1 cup cherry or grape tomatoes
  • 3 pieces uncured bacon nitrate free
  • 1/2 avocado cubed
  • 1 tbsp mayonnaise avocado oil based or click link for homemade
  • salt and pepper

Equipment

  • 1 food processor optional

Method
 

  1. Heat pan on medium heat. Cut bacon into pieces and place in pan. Cook until brown and crispy. Place on a plate or paper towel to cool.
  2. Shred iceberg lettuce in a food processor, or very finely chop.
  3. Rinse and dry tomatoes. Cut 1/2 an avocado into small chunks.
  4. Add mayonnaise to the shredded lettuce and stir until mixed. Add the tomatoes, some salt and pepper, and stir again. Pour into a serving bowl.
  5. Add the avocado and bacon on the top. Serve immediately.
