Fresh Peaches and Whipped Cream with Cinnamon
Fresh cut peaches served with a dollop of coconut milk whipped cream and cinnamon. A tasty and healthy snack or dessert!
It's peach season! Every year we get a couple crates of peaches from my parents and it's always fun to experiment with how to use them. But really, the best way to enjoy an in-season ripe peach is having it fresh. Just plain, cut up, fresh peaches. They are the best! This peaches and whipped cream recipe is simple and allows the tastebuds to focus on that soft juicy flesh of a peach.
This recipe is perfect as a snack or healthy dessert. The touch of cinnamon pairs very well with the peaches, as well as the sweetness of maple syrup. It's nice and light and doesn't make you feel too full. It's the perfect combination of fresh fruit with a lightly sweetened topping.
Putting Together Fresh Peaches and Whipped Cream with Cinnamon
The first step with making this recipe is to remember to put a can of full fat coconut milk in the refrigerator one day prior. Just prior to serving, remove the can from the refrigerator and scoop out the hardened coconut milk, putting it in a deep bowl or stand mixer bowl. The remaining liquid in the can can be discarded. Using a hand mixer or stand mixer, start mixing the coconut milk until it turns light and fluffy. Add the maple syrup and vanilla extract and continue to mix. Cut up the peaches in slices or bite sized chunks and place in bowls. Put a large dollop of the cream on the top of each one. Serve immediately and enjoy!
Storage
The cut up peaches typically do not store well in the refrigerator, so it is best to this eat immediately. If there is leftover whipped cream, this can be stored in an airtight container in the refrigerator for up to one week. Just whisk for a few seconds to make it light and fluffy prior to use.

Instructions
- Make the whipped cream recipe (see link above). Add ground cinnamon to the whipped cream and mix until blended.
- Cut up peaches and place in 4 bowls. Add large dollops of cinnamon whipped cream to each bowl.
