Easy Garlic White Bean Dip
This gluten free white bean dip is full of garlic flavor. Increase your vegetable intake by pairing your favorite veggies with this dip!

Because this recipe is made with cannellini beans, it is not considered paleo. Beans are not acceptable on a paleo diet. If you are not strictly paleo, this is a delicious gluten free appetizer or snack filled with garlic flavor.
Another benefit of this recipe is that it is quick and easy to make. The first step is to combine the oil, salt, garlic, beans, and thyme and bake it in the oven.
Once the beans have baked for several minutes, put them in a food processor. Add the additional oil and salt, along with a tablespoon of lemon juice. Blend until the bean dip is smooth.
And that's it! It's that easy. Pour into a dish and serve with your favorite vegetables. Carrots, celery, daikon, cucumbers, cauliflower, and peppers are all great options. Enjoy!
Easy Garlic White Bean Dip
Equipment
- 1 food processor
Ingredients
- 5 tbsp olive oil
- 4 garlic cloves, minced
- 1 15 oz. can cannellini beans
- 1 tsp salt, divided
- 3 sprigs thyme leaves
- 1 tbsp lemon juice
Instructions
- Preheat oven to 350°F. Stir together 2 tablespoons of olive oil with minced garlic in a bowl. Add the beans, thyme leaves and 1/2 teaspoon salt. Spread out the beans on a parchment lined baking sheet. Place in oven and bake for 12 minutes, stirring half way.
- Take beans out of the oven and put into a food processor. Add remaining the 3 tablespoons of olive oil, 1 tablespoon of lemon juice, and remaining ½ teaspoon of salt. Blend until smooth.
- Using a rubber spatula, scrape out the dip and put in a bowl. Add a splash of olive oil. Serve with your favorite vegetables.
