Easy Garlic White Bean Dip

- 5 tbsp olive oil
- 4 garlic cloves, minced
- 1 15 oz. can cannellini beans
- 1 tsp salt, divided
- 3 sprigs thyme leaves
- 1 tbsp lemon juice
Preheat oven to 350°F. Stir together 2 tablespoons of olive oil with minced garlic in a bowl. Add the beans, thyme leaves and 1/2 teaspoon salt. Spread out the beans on a parchment lined baking sheet. Place in oven and bake for 12 minutes, stirring half way.
Take beans out of the oven and put into a food processor. Add remaining the 3 tablespoons of olive oil, 1 tablespoon of lemon juice, and remaining ½ teaspoon of salt. Blend until smooth.
Using a rubber spatula, scrape out the dip and put in a bowl. Add a splash of olive oil. Serve with your favorite vegetables.
