Bacon Lettuce Tomato Bowl

Bacon, lettuce, and tomato sandwiches are the best! The crunch of the bacon, toast, and lettuce combined with the soft gooey tomato and mayonnaise. Yum! But once again, this delicious combination is a challenge for those who react to gluten. Sure, there is gluten free and paleo bread that can substitute. However, a bacon lettuce tomato bowl with avocado is another great option! It's a delicious combination of varying elements that are brought altogether in one bowl.
The addition of avocado brings more flavor and texture. And if you love avocado, you can always double the amount in this recipe. It pairs very well with the traditional blt concept.
Additionally, this is a wonderful dish to have in the later part of summer when tomatoes are in season. If you have the opportunity to grow them or buy at a local farmers market, the taste can't be beat.
How to Make a Bacon Lettuce Tomato Bowl
This recipe is easy to make yet delicious and filling, as it doesn't need to be complex to be good. The first step is to start cooking the bacon. Chop it up into pieces, then add it to a hot pan and cook until brown and crispy. Place on a plate or paper towel to cool. As the bacon is cooking, you can shred iceberg lettuce in a food processor. If you don't have a food processor, that is fine! Just finely chop the lettuce. Then rinse the cherry or grape tomatoes. Cut up half of an avocado into cubes.
Putting it Together
When the ingredients is prepped, it's time to mix it together. Add a tablespoon of mayonnaise into the shredded lettuce and stir. Once mixed well, add the tomatoes and mix again. Add a little salt and pepper and stir. Place in a serving bowl and top with avocado pieces and bacon. And that's it! A quick and filling meal in a matter of minutes.
Serve Immediately
Please note that it's best to serve your bacon lettuce tomato bowl immediately when it's fresh. The ingredients tends to wilt, as most salads do, and may get watery if it sits for too long. Additionally, it does not store well in the refrigerator. So it's best to make the amount you will eat in one sitting. The recipe states it is for one serving, but you can easily increase the ingredients portions to make as much as needed.

Equipment
- 1 food processor optional
Ingredients
- 2 cups iceberg lettuce shredded
- 1 cup cherry or grape tomatoes
- 3 pieces uncured bacon nitrate free
- 1/2 avocado cubed
- 1 tbsp mayonnaise avocado oil based or click link for homemade
- salt and pepper
Instructions
- Heat pan on medium heat. Cut bacon into pieces and place in pan. Cook until brown and crispy. Place on a plate or paper towel to cool.
- Shred iceberg lettuce in a food processor, or very finely chop.
- Rinse and dry tomatoes. Cut 1/2 an avocado into small chunks.
- Add mayonnaise to the shredded lettuce and stir until mixed. Add the tomatoes, some salt and pepper, and stir again. Pour into a serving bowl.
- Add the avocado and bacon on the top. Serve immediately.
