Paleo Chocolate Clusters

Rich honey sweetened chocolate filled with chewy dried fruits and crunchy nuts. And so quick and easy to make!

Equipment

  • 1 double boiler or bowl on a pot

Ingredients
  

  • 8 oz unsweetened chocolate chips or bar see notes
  • 4 tbsp honey
  • dried cherries with no added sugars
  • dried cranberries with no added sugars
  • almond slivers or slices
  • raw pumpkin seeds or pepitas
  • coconut shreds or chips

Instructions
 

  • Using a double boiler or a bowl on a pot of water, melt the chocolate on medium high heat while stirring occasionally. Do not overheat the chocolate. When just melted, turn off the heat. Leaving the chocolate on the pot of hot water, add the honey and stir to combine.
  • Place the bowl or top of the double boiler on a pot holder. Working quickly, add dried fruits, nuts, and coconut of your choice in the quantities you prefer. Stir to combine.
  • Scoop equally into 8 cupcake liners. Place in the refrigerator to set, about 15 minutes.
  • Remove from the refrigerator and store in an airtight container at room temperature for up to two weeks. If the clusters soften, place back in the refrigerator to reset.
    Clusters can also be stored in an airtight container in the freezer for up to two months. Let sit at room temperature to thaw.

Notes

If you prefer a sweeter chocolate, simply melt paleo approved chocolate such as date sweetened chocolate chips.
Use dried fruits, nuts, and coconut of your choice. Look for items that do not have additional sugars or processed oils. Dried cherries are highly recommended to add sweetness.
Nutrition information is approximate and based on 2 tablespoons each of all the fillings.
The serving size can easily be doubled by making each cluster half the size.
