Instructions
Make the paleo crepe recipe. Using all the batter, cook crepes in a medium skillet, between 8 and 10 inches. Place crepes on a baking sheet and let cool completely.
Make coconut whipped cream and keep cold in the refrigerator.
Once crepes are cool and coconut whipped cream is prepared, assemble the cake. Place the first crepe on a serving plate, spread a thin layer of jam over it, then place another crepe directly over the previous one. Continue layering the crepes and jam until all the crepes are used. Spread coconut whipped cream over the top and add fresh fruit.
Serve immediately or place in the refrigerator until ready to serve. Any leftovers can be stored in the refrigerator for up to 2 days.
