This special drink can work well for those evenings where you want a little something but don't want the alcohol. You can also control the level of sweetness, depending on how much simple syrup, juice, and sparkling water you use. And the touch of rosemary in the homemade simple syrup gives an extra special flavor!

How to Make Honey Simple Syrup for your Paleo Mocktail

Making a simple syrup is quite, well, simple! It's combining water with sweetener to make a sweet syrup. Many simple syrups use a 1:1 ratio of water and sweetener, which I personally find too sweet. This recipe calls for less than a 4:1 ratio but still has plenty of sweetness. Specific instructions are below in the recipe box.

Once the honey simple syrup is made, combine it with juice and sparkling water to make your paleo mocktail. A 1:1:1 ratio of juice, simply syrup, and sparkling water works well. But you can also play with the ratios to see what works best for you! Add a sprig of rosemary to your beverage and enjoy!

Paleo Mocktail

Ingredients
  

  • 1 1/4 cups water
  • 1/4 cup honey
  • 2 sprigs rosemary
  • juice see instructions
  • sparkling water

Instructions
 

  • Make the honey simple syrup by adding water, honey, and rosemary sprigs to a small pot. Place on the stove and turn heat to medium high. Once the honey is dissolved and the water starts to simmer, cover and turn the heat to low. Continue to simmer for 15 minutes.
  • Turn off the heat and let syrup cool. Then pour through a strainer into a jar. Cover and refrigerate.
  • To make mocktails, pour juice, simple syrup, and plain sparkling water in a glass. Use a 1:1:1 ratio, or experiment depending on how much sweetness you prefer. Juice options can include: cranberry, cherry, pomegranate, raspberry, or pear. Add a sprig of rosemary to garnish.
